This wine is our dedication to Paola Palazzi, the pioneer of organic in Tuscany, a
visionary who , unlike anyone else, planted native vines when , on the contrary,
international vines were being planted nearby. Colombana in purity, a grape that
is told in many legends undoubtedly the most famous one tells that it was
planted by the disciples of St. Columbanus, with the directive to plant only in a
land "of a heart of gold and a living and generous faith" like our territory.


Historical fact, on the other hand, is that in the early 1900s entire families would
move for a week from Florence to our countryside, attracted by the curative
reputation of the famous Columban grapes!


In tradition, the grapes were kept until New Year's Eve, since "He who eats
colombana on the first of the year counts money all year long." (another good
reason to drink our wonderful macerate).

Dama Bianca 2021 is a macerated wine from indigenous colombana grapes, a
white grape variety, left to macerate in contact with the skins, as is normally
done in red wine making.
The end result is a more structured wine with distinct and heady tastaste
sensations. The color is more intense and reaches amber tones.

Soil and vineyard description:

  • mainly clay-limestone of marine origin, with abundant silt;
  •  Altitude: 150 m above sea level.
  •  vineyard exposure: west, hilly area between Pisa and Volterra in the
  • territory of Terricciola; vineyard exposed to marine air currents

from the Tyrrhenian coast;

  •  Vineyard age: 50 years;
  •  training system: espalier with spurred cordon pruning;
  •  density: 4000 vines/ha; soil composition: mainly clay-limestone of
  • marine origin, with abundant silt;
